  • Butter
  • Breadcrumbs
  • Almonds
  • Cheese
  • Salt
  • Egg Yolk

Hi there, I'm Matt from the Underground Cookery School, and today, I'm going to do a video cookery lesson for you. Hello. Yes, you.

I'm going to show you how to make cheese sticks. I've got some flour, I'm going to pop that into a bowl with some mustard powder, it gives it a nice old kick, some baking powder or you can use bicarbonate of soda, and then I've got some butter which I'm just going to throw in, like that. And what I'm going to do is add some breadcrumbs, some almonds and of course, the cheese.

Now, I'm going to work that into a dough and that's going to take me a couple of minutes. So, if you pop back, in a moment, we'll carry on with the process. Now, as you can see, I've mixed that together to form a crumble mix.

I'm just going to add a little pinch of salt because that just brings out all the flavors. I'm going to add a little bit of egg yolk but I don't need too much because it is quite moist. And what I'm now going to do is go back in, work that into a dough and when you come back, you will see me with a nice dough ball here.

So, we've got a nice dough there, a nice cheesy dough, and what we're going to do now is just roll that dough out. So, just a little bit of flour on the work station, you don't want to coat it in flour, but just enough, so that I'm going to roll this out. It's a little broken up but we can doctor it around.

There you go. Just going to roll it a little bit further. Lovely.

Right, there's our base. Stick that out the way and what we're going to do is just cut our straws into strips. Now, I'm going to cut all of these which you don't need to see.

So, come back in a minute. Go and make a cup of tea or something. Well, I've just laid those, I've actually laid them onto a bit of baking parchment.

You can use greaseproof paper, provided the oven's below, say 150 degrees. I'm actually going to use the oven on 180. I'm going to cook these off for probably about ten minutes and we'll end up with lovely cheese sticks.

So, in they go. See you in a minute. Well, I've taken those out of the oven.

What's important is just to let them rest for a good five minutes before you take them out. Otherwise, they'll just disintegrate. But, there you have our cheese straws, perfect as an accompaniment with an aperitif before a meal. .
