How To Make Cheesecake

Cheesecake Recipe. An unbeatably creamy cheesecake which is simple and easy to make. Delve into our Cheesecake recipe with your friends and family.


Step 1:

You will need

  • 250 g butter biscuits, crumbled
  • 100 g butter, melted
  • 1 kg quark cheese
  • 4 eggs
  • 1 orange zest
  • 200 g sugar
  • 400 g sour cream
  • 60 g vanilla sugar
  • candied citrus to garnish
  • 1 baking tin, 26cm wide
  • 1 rubber spatula
  • 1 whisk

Step 2:

Preheat the oven

Preheat the oven to 150ºC, gas mark 2.

Step 3:

Make the base

Pour the melted butter over the biscuit crumbs and mix them together well. Now take the baking tin and spoon in the biscuit and butter mix. Even it out while pressing it down into the tin to make the base for the cheesecake.

Step 4:

Mix the remaining ingredients

Add the sugar to the cheese followed by the orange zest, then using a hand whisk, blend the ingredients together. Now one by one, break the eggs into the bowl and gradually stir them in.

Step 5:

Add the cheese mixture to the baking tin

Pour the mixture over the biscuit base and give it a quick shake to even it out.

Step 6:

Bake

Place the tin in the centre of the oven and bake the cheesecake for 25 minutes.

Step 7:

Lower the temperature and continue baking

After 25 minutes, lower the temperature to 130ºC, that's gas mark 1. Bake the cheesecake for a further 40 minutes until set.

Step 8:

Check the cheesecake and raise the temperature

Check that the cheesecake is set by gently shaking it and remove it from the oven. Then raise the temperature of the oven to 170ºC or gas mark 3.

Step 9:

Finish the cheesecake

Put the vanilla sugar into the same bowl as the sour cream and mix the ingredients together well. Then pour it over the top of the cheesecake and using the rubber spatula smooth it out. Finally, give the tin a gentle shake to make it even.

Step 10:

Bake

Put the cheesecake back into the oven and bake for a final 5 minutes.

Step 11:

Remove from the oven and chill

Take the cheesecake out of the oven and leave it to cool down. Then put it in the fridge still in it's tin and let it chill overnight.

Step 12:

Serve

Take the cheesecake out of the fridge and run a knife around the edges to help release it from the tin. Then gently ease it out. Decorate the cheesecake with the candied citrus and finally slice it up and serve!

i used 3 8oz packs philadephia cheese, 1 cup sugar, mix together, add in 5 eggs one at a time & 1tsp vanilla, add to base of butter & digestive biscuits, cook 45 mins at 375 degrees.Top with fruits or serve with cream

i make chhesecake with philadelphia yo and mascarpone. add sugar, lemon zest, vanilla etract and no eggs, i dont put it in the oven

Quark Cheese is like soft cheese - they sell it in Morrisons. I'm going to try this cake.

I've never seen a recipe where you put the sour cream on top? All the recipes I know combine all the ingredients. Thanks to the poster that gave the tip to use mascarpone cheese. I'll have to try that. To the poster asking about other flavors.. how about lemon?

Hi. I am planning to make a cheese cake for my mum for mothers day; it is one of her favourites - watching the video made it seem so simple but is there any tips, better substitute ingredients or flavors etc that i could try that anyone noes of??

i always make it with philadilphia cheese and whipping cream,you could also add mascarbone chees its sweet and nice try it .mmmmmm

I made better cheesecake than this. for the filling I used Philadelphia cream cheese instead, I also used some sour cream and some whipping cream, i mixed them for like 5-7 mintues, till the mix was sooo smooooottthhh..then for the base I used Daegastive buiscuit crumbes with butter, mixed them and pushed it really hard on the baking tin, the harder you push the better the result because the base will keep the cake all together..then i chilled the base and the filling in the freezer for like 1.5 hours and then i added the filling to the biscuite and put in 180 degree owven for 20 mins.. then put it in the fridge and took it the next day and i added some black berry jam as a topping and it was yammmm..

what is quark cheese? Can I substitute it with cream cheese (philadelphia) which I can get easily from the supermart?
