How To Make Chicken And Cheese Quesadillas

Step 1: You will need
- 2 flour tortillas
- 75 g grated cheddar cheese
- 1 chicken breast, sliced in half horizontally
- 2 tbsp olive oil
- 1 tomato, sliced
- 1 tsp oregano
- 1 tbsp lemon juice
- salt and pepper
- 1 frying pan with lid
- tongs
- 1 spatula
- 1 spoon
- 1 bowl
- 1 grill pan
- 1 cutting board
- 1 knife
Step 2: Marinate the chicken
Into a bowl add the chicken, oregano, lemon juice and olive oil. Season with salt and pepper and combine together, thoroughly coating the meat. Set aside to marinate for a few minutes.
Step 3: Grill the meat
Heat the grill pan and when hot, add the chicken breasts. Cook for about 1.5 minutes and then turn them over.
Cook the other side for another minute or so and then remove from heat.
Step 4: Slice the chicken
Once the chicken has cooled, cut the breasts lengthwise and then across, making them into little cubes and set aside.
Step 5: Cook the quesadillas
Place a pan over a medium heat. Drizzle a little olive oil into the pan and add a tortilla shell. Allow it to cook until it becomes crispy. Now, sprinkle a little cheese over the tortilla, trying to avoid getting any directly onto the pan.
Add the chicken, spreading it evenly over the melting cheese. Next, add the tomatoes and add a little more cheese. Season with salt and pepper and finally, place the second tortilla shell on the top.
Cover the pan with a lid and allow it to cook for a minute, making sure not to let it burn. Turn the quesadilla carefully and add a little more oil to the pan. Allow it to cook for a minute or two more and remove from the heat.
This dish can be transformed into a vegetarian variety by just omitting the chicken. Experiment with the fillings-- they can be nearly anything!
Step 6: Cut and serve
Place your quesadilla on a cutting board and cut it first into halves, then into quarters and finally into eighths. Serve immediately.

It looks rather a fancy way to make quesadillas. Real ones are quite more different from these you show. Anyway, it seems to be nice.
