How To Make Chicken Baked With Garlic

Step 1: Preheat the oven
Set the temperature of the oven to 200ºC, 460ºF or gas mark 6.
Step 2: Season the chicken
Pour a little olive oil over the chicken and rub it to coat the entire surface of the bird.
Season generously with salt and pepper.
Step 3: Brown the chicken
Heat up 1 tbsp of olive oil and half of the butter in a frying pan.
When hot, add the chicken and cook it on all sides until nicely browned.
Step 4: Make the herb paste
Take one of the garlic bulbs and remove the outer layer.
Put the bulb upside down on the counter and press down on it with the palm of your hand. This is how to separate the cloves from a garlic bulb quickly and easily.
Repeat with all four bulbs.
Put the coriander seeds into the mortar and crush them with the pestle.
Roughly chop the rosemary and thyme, add them to the mortar and crush them while mixing in the coriander.
Step 5: Add the oil and butter to the mortar
Take the remaining oil and butter and add it to the herb mixture. Combine the ingredients together to form a paste and add a little salt.
Step 6: Transfer to casserole dish
Put the chicken in the centre of the casserole dish, arrange the garlic cloves around the edges and add a little oil from the frying pan.
Step 7: Coat the chicken
Take a generous handful of the herb paste and rub it all over the chicken.
Step 8: Cook the chicken
Put the lid on the casserole dish and place it in the oven. Cook for 1 1/2 hours.
Step 9: Add the stock
After an hour and a half, remove the lid and add the stock to the casserole dish. Cook for a further 15-20 minutes.
Step 10: Serve
Serve while baking hot.
