How To Make Chicken Carbonara

Carbonara is one of the all time classic Italian pasta dishes, and one that all aspiring chefs should master. In this step by step guide Chef Paul Mulvenna-Pegrum shows you how to make a creamy carbonara with chicken.

Ingredients

  • 50 g butter
  • 1 chicken breast, cut into strips
  • 4 mushrooms
  • 2 rashers smoked bacon
  • 1 egg yolk
  • 150 ml double cream
  • 50 g parmesan cheese
  • salt
  • pepper
  • tagliatelle

Method

Melt the butter in a heated pan, add the chicken strips, mushrooms, smoked bacon cut into cubes, salt and pepper and cook together until the ingredients have browned slightly.

Add some tagliatelle which has been pre-cooked, the double cream and white wine, and allow to cook down a bit more.

Add the egg yolk and parmesan. Stir to combine the ingredients, and serve.
