Make the broth

Place the peanut oil into an already hot pan. Add the shallots and stir gently. Now add the garlic, the ginger, the carrots, the chilli, and stir.

When the vegetables have softened slightly, add the broth, rice wine, soy sauce, and season with salt and pepper. Stir a bit and let it slow simmer for 15-20 minutes.

Strain the broth

After 20 minutes, drain the broth into another pan and discard the solids from the sieve. Return the broth to the flame.

Poach the chicken

We are now ready to poach the chicken breast. Place the chicken into the hot broth. Make sure it is totally submerged and poach on a slow simmer for about 7 minutes.

Only allow the broth to reach a gentle simmer. If it boils too strongly, the chicken will turn out to be dry and tough. A slow simmer will make the poached chicken moist and tender.

Cook the noodles

After about 7 minutes, remove the breast from the broth and set it aside on a tray. Now place the ramen noodles into the broth and let them cook for 2-3 minutes. Be careful not to let them overcook!

Present and serve

First, slice the chicken. Slice it against the grain and also make the slices fairly thin. Next, spoon some of the noodles into the bowl along with the broth.

Place a few slices of chicken on top, followed by a few slices of cucumber, red pepper, spring onion, and coriander. Finally, drizzle some of the chilli oil over top and serve!
