Step 1: You will need
- 500 g cold chopped cooked chicken
- 200 ml thick white sauce
- 1/2 tsp salt and ground black pepper
- 1 tsp lemon juice
- 1 egg yolk
- 1/4 tsp celery salt
- 1 egg
- 120 g cracker crumbs
- 2 tbsp cold water
Step 2: Combine the ingredients
Mix the cooked chicken, white sauce, egg yolk, lemon juice and seasonings in a bowl and refrigerate.
Step 3: Shape the croquettes
Form the mixture into croquettes and roll in cracker crumbs and then dip into an egg that has been beaten and diluted with water. Coat the croquette once more with the cracker crumbs.
Step 4: Fry
Fry the croquettes in oil for approximately 2 minutes. Place the croquettes on paper towels to drain.
