Ingredients

  • 1 onion, roughly chopped
  • 1 carrot, roughly chopped
  • 1 bouquet garni
  • 500 ml white wine
  • 1 tsp olive oil
  • 500 ml chicken stock

Method

Heat the olive oil in a pan and add the chopped onions and carrots when the oil is hot. Cook these vegetables for about 2 minutes.

Add the bouquet garni and the wine. Bring to the boil, then gently reduce with the lid off until you only have about 5 or 6 tablespoons of the liquid left.

In a separate pan, bring that chicken stock to the boil, then remove the lid and reduce it until it to a syrup.

Combine the two sauces to taste.
