Step 1: You will need

  • 1 kg chicken livers, cleaned and trimmed
  • 6 shallots, peeled
  • 4 garlic cloves, peeled
  • 25 g parsley, washed and dried
  • 4 slices of crusty bread, cut diagonally
  • 4 tbsp olive oil
  • 100 g flour, to season
  • 3 tbsp vegetable oil
  • 600 ml milk
  • salt and pepper
  • 1 chopping board
  • 1 large knife
  • 1 ribbed frying pan
  • 1 frying pan
  • tongs
  • 2 bowls
  • 1 pastry brush
  • kitchen paper towel

Step 2: Clean the livers

Use a sharp knife to trim away any excess fat or sinew.

Step 3: Place livers in milk

Transfer the livers into the large bowl, pour in the milk and leave to stand for roughly 20 minutes.

Step 4: Finely chop the garlic

Chop all of the garlic into fine pieces.

Step 5: Prepare the parsley

Pick the leaves from the parsley stalks and chop them finely.

Step 6: Slice the shallots

Thinly slice all of the shallots.

Step 7: Drain the livers

After 20 minutes, remove the chicken livers from the milk and place them on kitchen paper to drain.

Step 8: Oil the bread

Using the pastry brush, coat both sides of the bread slices with a good quality olive oil.

Step 9: Char-grill the bread

Put the ribbed skillet on a high heat and warm for 1-2 minutes. Add the bread and grill for 2 minutes on each side.

Step 10: Season the livers

Grind some black pepper and salt into the flour. Spread some of the flour over the chopping board and then place the chicken livers into the flour.

Season them with salt and pepper, coat thoroughly with flour and set aside.

Step 11: Add other ingredients into the pan

Place the frying pan on a high heat, add the vegetable oil followed by the chicken livers.

Add the shallots, tossing and turning the ingredients, then the garlic and finally the parsley.

Cook for about one minute more and remove.

Step 12: Serve

Place a slice of char-grilled crusty bread onto an individual serving plate. Next, heap a generous helping of chicken livers on top. To garnish, add a sprig of parsley and then drizzle on little amount of olive oil and the dish is ready to serve.
