How To Make Chicken Marsala

The key ingredient which gives Chicken Marsala it's distinctive sweet flavour is the aromatic Marsala wine, a fortified aperitif from the Silcilain town of the same name.

Step 1: Prepare the ingredients

Slice the mushrooms in chunky pieces. Finely chop the sage and two shallots. Peel, crush and finely chop 2 garlic cloves. Lastly slice 2 chicken breasts into healthy sized pieces.

Step 2: The Chicken

Heat a tblsp of olive oil in a pan until hot, then add the chicken pieces. Stir regularly for 5 minutes until the chicken has turned golden brown.

Step 3: Mushrooms and Spices

Add the mushrooms, shallots, sage and garlic to the pot. Pour over a tblsp of olive oil and stir well for one minute.

Step 4: Marsala Wine

Pour over 2 tblsp of Marsala wine and stir. Leave to cook for a further 4 minutes stirring occasionally. Add salt and pepper to taste.


Remove from the heat and serve with pasta, rice or mashed potato.
