How To Make Chicken Parmesan
Step : You will need
- 2 medium chicken breasts, halved
- 3 large eggs
- ¼ cups (60ml) cream
- 100 g flour
- 240 g bread crumbs
- 360 g Parmesan cheese
- 120 g mozzarella, fresh
- 1 cups (250ml) marinara sauce
- olive oil
- salt, to taste
- pepper, to taste
Step 1: Prep The Poultry
Take two defrosted chicken breasts and slice them lengthwise down the side to open them up, or "butterfly". (The chicken, cheese and bread crumbs will burn if the breasts are too thick.)
Step 2: Breading Station
The breading station consists of 1 cup (100 g) of flour, an egg mixture, composed of 3 eggs and 1/4 cup (60 ml) of cream and a breading station made with 2 cups (240 g) of bread crumbs and 2 cups (360 g) of Parmesan cheese.
Step 3: Season And Bread
Season all sides of the chicken breast with salt and pepper. Dip each chicken breast into the flour, making sure all sides are coated. Next, dip the chicken breast into the egg bath, making sure all sides are coated. Finally, dip the chicken breasts into the bread crumb/Parmesan mix and press firmly, coating every inch with the bread crumbs and Parmesan cheese.
Step 4: Sauté The Chicken
In a hot pan, fill the bottom portion with olive oil. Lay the breaded chicken breast into the pan away from you to prevent burning. Sauté on high heat for 5 minutes on each side, making sure to constantly move the chicken breast around in the pan to prevent sticking. Place on a paper towel and repeat.
Step 5: Sauce, Heat And Serve
Place the sautéed chicken breasts in a medium, oven safe, dish. Coat the chicken with 1 cup (240 ml) of marinara sauce. Cover chicken and sauce with 1 cup (120 g) of fresh mozzarella; tear it apart, do not grate. Place in a 400F ((200C)/Gas Mark #6) oven and bake for 15 minutes until golden and crispy. Enjoy!
