Step 1: You will need

  • 1 bunch of parsley, leaves chopped and stems kept separate
  • 1/2 tsp black peppercorns
  • 1 spring onion, chopped
  • 1 tsp salt
  • 2 chicken breasts, skinless
  • 3 small potatoes
  • 6 asparagus spears, blanched and cooled
  • 1 endive lettuce
  • 1 tray of ice cubes
  • for the dressing:
  • 1 tbsp parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • salt and fresh ground black pepper
  • 1 large saucepan
  • 2 bowls
  • 1 medium saucepan
  • 1 sharp knife
  • 1 chopping board
  • 1 slotted spoon

Step 2: Poach the chicken

Half fill the large saucepan with water and add the parsley stalks, peppercorns, spring onions, and salt. Bring to the boil and add the chicken breasts.

Then turn the heat to low and cook the chicken for thirty minutes. Once cooked, leave the chicken in the liquid to cool.

Step 3: Make the dressing

Into a bowl add the olive oil, lemon juice, and chopped parsley. Season with salt and pepper and mix together.

Step 4: Prepare the potatoes

Place the potatoes into a saucepan of salted boiling water and cook for fifteen minutes or until tender. Now, half fill a bowl with water and add the ice cubes. Put the cooked potatoes into the iced water giving them three minutes to cool.

Step 5: Finish the potatoes

Use a knife to peel the potatoes. Now, cut them into thick slices and put the slices into a bowl. Finally, spoon over a little of the dressing and mix together without breaking-up the potatoes.

Step 6: Serve

Place a few endive leaves onto a plate, add some asparagus spears, and a few potato slices. Cut the chicken into thick slices. Place this on top of the salad and finish with a little dressing.
