  • 1 small roast chicken
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 1 g chilli flakes
  • 300 g tinned chopped tomatoes
  • 250 g red kidney beans
  • 1 coriander bunch
  • 2 g ground cumin
  • 2 g ground coriander
  • 2 g smoked paprika
  • 10 taco shells
  • salt
  • pepper
  • 6 ml oil
  • 3 tomatoes
  • 1/2 lemon, juiced
  • 6 g oregano
  • 150 ml sour cream
  • 200 g cheddar cheese, grated


Heat the oil in a frying pan, then add the chopped onion. Stir to stop it burning, then add the garlic, the chilli, cumin, ground coriander, 5 g of oregano, the paprika, and some some salt and pepper.

Mix well, then add the chopped tomatoes and cook for about 6-8 minutes.

To make the salsa, mix together the chopped red onion, the chopped fresh tomato, 1 g of oregano; season with salt and pepper and squeeze over the juice of half a lemon.

Add the beans and the cooked chicken to the tomato sauce, then stir well.

Add fresh coriander, then spoon some of the mixture into each taco shell. Garnish with salsa, grated cheese, sour cream and some more chopped coriander.
