How To Make Chicken Vindaloo

How To Make Chicken Vindaloo: Using the expertise of Shahena Ali, VideoJug presents a video on how to make a Chicken Vindaloo. This classic English dish of Chicken Vindaloo is simple enough to make if you follow VideoJug's easy recipe. Enjoy!

You Will Need:

  • 3 chicken breasts
  • splash lemon juice
  • 2 Tbsp white wine vinegar
  • 2 medium onions
  • 5 tsp garam masala
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp cayenne pepper
  • ½ tsp mustard seeds
  • ½ tsp ground cumin
  • ½ tsp ground cinnamon
  • ½ tsp chilli powder
  • pinch salt
  • coriander leaves , to garnish
  • 1 Bowl
  • 1 Saucepan
  • 1 metal or wooden spoon

Step 1:

Make a Paste

With the lemon juice, vinegar, onion, mustard seeds and spices, make a paste. Add the chicken to the marinade and leave for at least 3 to 4 hours.

Step 2:

Fry the Onion and spices

Fry the onion in oil until it has turned translucent, then add the garlic, ginger, spices, salt and stir.

Step 3:

Add the chicken

Add the marinaded chicken and cook until the chicken is opaque in colour.

Step 4:

Simmer

Reduce and simmer for 20 minutes or until the Chicken is cooked, stirring constantly. If needed, add more water to prevent the curry becoming too thick or dry.

Step 5:

Serve

Serve hot with rice and garnished with the whole coriander leaves sprinkled over the top.

Well, I’ve bought all the ingredients and I have the chicken and spices in the fridge at the moment doing their little marination thing, but Im puzzled as to where all the juices will be because there is no mention of using any water in the dish? The Vindaloo’s that I have bought from the takeaway are “Sloppy” with lots of lovely sauce to dip my chapattis in. How do I make it more “Sloppy” without making it any weaker? Could I use tinned chopped tomatoes, please forgive me, Im just a beginner; we all have to start somewhere!

its ok, I googled another recipe , and it was waaaay better than this. more spices and marinade,and it tasted better than most restaurants. this is ok, its just way simplyfied.

well just add lamb instead of chicken, its not that hard !!!!!!

Lol, not enough chilli for a vindaloo, i use naga jolokia chillies (the world's hottest), and gtenerally go for phaal hot. If you don't add nagas, scotch bonnets or birdseyes will do, just use more. There's no need to marinate with these other spices, just use cumin, chillis, coriander, turmeric, some cardamom seeds, and fry these with the onions. Then add ginger, tomato puree and garlic, then chicken cubes, and fry till chicken is white on both sides. Then add water and simmer for 20 to 30 mins, reducing thereafter until you get the sauce thickness you want. THEN you add the garam masala (not before) and simmer for a further 5 minutes....voila!

Oh my, what a beautiful woman. If I find a wife like Shahina, I'll be on my hands and knees for the rest of my life thanking my lucky stars. Yeah, the vindaloo is delicious, too :-)

I Love curry . It makes me laugh that 2 other people said she is gorgeous . I must surely agree and had to watch this a couple of times to take in the recipe and the beauty of the chef.
