How To Make Chicken With Sweet Chilli Sauce

Step 1: You will need...
- 220 ml coconut milk
- 1 lime - zest only
- 2 shallots, chopped
- 3 cloves of garlic, crushed
- 1 tsp turmeric
- 3 red chillies, chopped
- salt and pepper
- 1 ½ kg chicken, cut into 16 pieces
- 500 ml oil, for frying
- 600 ml water
- 20 cucumber slices, to serve
- 100 ml sweet chilli sauce, to serve
- 1 large saucepan
- 1 oven dish
- 1 pair of tongs
- 1 deep pan for frying the chicken
- 2 paper towels
Step 2: Heat coconut and chilli mix
Put the coconut milk, lime zest, shallots, garlic, chillies, turmeric, salt and the water into a large saucepan. Bring to the boil and simmer over a medium heat.
Step 3: Cook the chicken
After 5 minutes, add the chicken pieces and bring back to the boil. When boiling, reduce the heat and cook for 20-25 minutes or until the chicken is tender.
Step 4: Remove the chicken
When the chicken is cooked, remove from the pan, place in an oven dish and allow to cool.
Step 5: Fry the chicken
Heat the oil in a deep pan. When the oil is hot, place the chicken in the pan in batches, being careful not to overcrowd. Cook until golden.
Step 6: Drain the chicken
When the chicken is golden brown, place on a plate with paper towels to remove excess oil.
Step 8: Serve
Serve on a plate with cucumber slices and plenty of sweet chilli sauce.
