Step 1: You will need

  • 4 tbsp olive oil
  • 450 g chuck steak cut in to small cubes
  • 1 onion finely chopped
  • 4 garlic chopped
  • 1 400g can of chopped tomatoes
  • 1 green pepper chopped
  • 1 red pepper chopped
  • 1 chilli chopped
  • ½ tsp cayenne
  • 1 tsp cumin
  • 1 tsp oregano
  • 400 g cooked red kidney beans
  • 100 ml chicken stock
  • sour cream for garnish
  • a few coriander springs
  • salt and pepper
  • 1 large saucepan
  • 1 wooden spoon

Step 2: Preheat the oven

Set the oven to one hundred and eighty degrees centigrade or gas mark 4.

Step 3: Make the stew

Begin by adding the olive oil into a heated casserole pan then continue to add half of the meat. We will cook it in batches as not to cool down the pan. and stir it in using your wooden spoon.

Let it to cook for a few minutes before adding the next batch, allowing any liquid to cook down and then add half of the onions, stir in and leave to sweat, stirring occasionally then after a few minutes add the rest of the onion.

At this point add more oil if you wish and continue to stir then add the garlic, stir it in follow with the green pepper, red pepper, chilli and mix in well.

Continue with the cayenne pepper, cumin, oregano and season generously with salt then pepper and combine thoroughly. Then add the chopped tomatoes and the chicken stock and give it a quick mix.

Finally bring it all to a slow simmer before removing it from the heat ready for stewing.

Step 4: Cook the stew

Place the pan in the centre of the preheated oven and cook for roughly an hour, stirring occasionally.

Step 5: Add the beans

After 1 hour add the cooked kidney beans and stir them in. Cook for a further 15 minutes and remove from the oven.

Step 6: Present

Fold a tea towel to avoid burning your hands on the hot pan handle, and spoon some of the chilli con carne into two serving bowls. Add a generous dollop of sour cream on top and finally a sprig of coriander.

Step 7: Serve the chilli con carne

Serve with mashed potato or rice or simply on it's own.

    added loads of birds eye chilli to this .......reall chilli is made with beef not mince

    We tried this but used mince. Fantastic. Kids not so keen on kidney beans so used baked beans, they loved it . Brilliant. Sites like these can really give u a boost if ur struggling with what u fancy for a meal ....... recommend.

    Looks gr8 , but not got steak so will use mince as a substitute, should be lurvly for our dinner.
