- basmati rice
- dried mushrooms
- pancetta or bacon
- egg yolk
- soy sauce
- vegetable oil
Heat vegetable oil in a pan. Add onions and fry for around two minutes. Add the basmati rice, stir in with the vegetable oil and cover with hot water. Turn the heat down and cook with a lid on for 15 minutes. Don't be tempted to open the lid while the rice is cooking as it will become too sticky.
While the rice is cooking, reconstitute the dried mushrooms in boiling water.
After 15 minutes, remove the lid, cover the pan with a tea towel and leave to sit for 5 minutes.
In a wok, heat some vegetable oil and fry the onions and pancetta for two to three minutes. Add the egg yolk, mushrooms, prawns, soy sauce and rice and fry for a further two to three minutes. Serve garnished with chopped fresh onions.
