How To Make Chocolate And Banana Muffins

Step 1: You will need
- 300 g brown sugar
- 150 g chocolate chips
- 270 g plain flour
- 1 tsp baking soda
- 1 tsp baking powder
- 40 g cocoa powder
- 250 g ripe bananas, mashed
- 2 eggs, beaten
- 100 g butter, melted
- 1 vanilla extract
- 2 crème fraiche
- 1 bowl
- 1 spoon
- 1 baking tray
- 16 muffin moulds
Step 2: Preheat the oven
We need to set the oven to 160°C, 320°F or gas mark 2 before beginning to make the muffins.
Step 3: Mix all the dry ingredients together
Combine in a bowl the flour, the brown sugar, the chocolate chips, the cocoa powder, the baking soda, and the baking powder. Mix together thoroughly with a spoon to combine the ingredients as much as possible before beginning the next step.
If you want to add any nuts to this recipe, this is the time to do so!
Step 5: Add the wet ingredients to the dry
Combine the vanilla, butter, egg, banana and crème fraiche to the bowl with the dry ingredients. Stir it together with a spoon, just enough to mix everything evenly.
Step 6: Bake
Now put some of the batter into each of the muffin moulds using the spoon. Only fill them to about 2/3 of their capacity since the batter will rise while baking.
Place the muffins onto a baking tray and put them into the oven. Allow to bake for about 25-30 minutes.
TOP TIP: The muffin moulds that we are using here are made of non-stick silicon. You can use any type you like but remember that you might have to butter and flour them first!
Step 9: Remove from oven
Once the muffins are done, take them out of the oven and let them cool a little before removing them from the moulds. Place them on a serving tray.
Step 10: Serve
If you like, you can sprinkle the muffins with a little icing sugar. They taste best if you eat them while still warm. Enjoy!

Which one of the following oven cooking modes should I use for this recipe and baking time? Circulating heat (back heat with fan), traditional (upper and lower heat with no fan), traditional pulsed (upper and lower heat with fan) or pulsed bottom heat (bottom heat with a slight dose of top heat and with fan)?
Great recipe, first time I tried to bake muffins at home - definitely more times will follow :) Besides instead of creme fraiche I used soured cream, and it turned out that `im out of vanilla essence, but still muffins were gorgeous - very chocolety - just the way I like :)
tried , but spread everywhere on bakin tray (as video suggests) better to us muffin trays , otherwise good hope all enjoy
i have done the muffins.. and u forgot a step: TO LOW THE FIRE WHEN U PUT IT IN THE OVEN TO BAKE THEM!! IF NOT THEY WILL BURN!!!!!

what flour do you use plain or self raising
I made these without the bannana but using some milk instead and a bit more chocolate and they were really lovely. They didn't rise perfectly but I took them to college and they were a huge hit with my philosophy class.

What happen if we did not add the creme fraiche?
what is creme fraiche? And is there any subsitute if I can't get it?
