Begin by melting the chocolate. To do this, place your chocolate chips in a heat proof mixing bowl, then set the bowl over a pan of simmering water. Make sure you keep the temperature low as the chocolate can seize if you try and melt it too quickly.
Once the chocolate has melted, remove the dish from the pan of water. Mix in your chopped cashew nuts and raisins, then drop spoonfuls of the mixture onto parchment paper in a baking tray.
Refrigerate for 30 minutes before eating to allow them time to set.
