Ingredients

  • flour
  • caster sugar
  • baking powder
  • demerara sugar
  • 1 egg
  • butter
  • chocolate chips

Method

Mix together the flour, caster sugar and baking powder. In a seperate bowl, combine the demerara sugar with the egg and the butter. Make sure the butter is a room temperature. Mix for 2 to 3 minutes, then add the flour and sugar mixture.

Knead the ingredients together to form a dough. Add the chocolate chips and keep kneading until the mixture has formed a large dough ball. Wrap in cling film and place in the fridge for 15 to 20 minutes.

Remove the dough from the cling film and roll it into a sausage shape. Cut into quarters and cut each quarter into six roughly equal pieces.

Lay the slices on a baking tray and place in a preheated oven at 160 degrees for around 10 minutes.
