Step 1: You will need

  • Belgian Chocolate Covering Paste
  • Marzipan

Step 2: Blend

Modelling Chocolate is very firm, so you might need to give it a knead first. If it’s cold you can warm it in the microwave for a couple of seconds so it isn’t rock hard. Knead together your 50-50 mix of Chocolate and Marizipan, they need to be nice and evenly mixed. When the colour is blended evenly, you know the marzipan is mixed. It should feel smooth and you shouldn’t feel any lumps of chocolate.

Step 3: Decorative Uses

Chocolate Marzipan is very good for covering wedding cakes. If you've got a chocolate wedding cake, it makes it more stable and people do like the taste of chocolate marzipan. So it can be used as a cake covering on its own.

Step 4: To Make A Hedgehog

To make a Marzipan Hedgehog, roll the Marzipan into a ball, taper it down one side and then cut into it with mini scissors. You need to leave a gap for the face so once you've textured your Hedgehog, you just indent two holes for eyes and one for a nose. Put tiny balls of white into the eyes and the nose using a touch of glue. Make sockets so the eyes don't fall out or get too boggley. Use tiny bits of black on the eyes.
