The ones in this video don't look apetizing at all.. Truffles are way better looking, more round if you use a melon baller or small ice cream scoop (such as a #70), scoop out balls ..

It's also easier to use a glass bowl over simmering water

umm, you tried to melt the chocolate on a heat that was too high, casuing the chocolate to seize when anything is added to it so it was rather stupid putting the water in it to start with, because the water doesn't help chocolate melt. and also when making a double boiler the water isn't ment to touch the top saucepan or it won't work very well... well thats my cmplaint

You are all a bunch of idiots. People asking "can i use milk instead of cream" or "what kind of cream do you use" or "they arent sweet enough". Shut the hell up. No, you cant use milk. The only cream you should use is thick double cream of course and finally they arent supposed to be sweet. Go eat a pale, milky, weak tasting Mars bar if you cant handle real chocolate.

Why would you put water into the chocolate from the start? You're causing it to seize doing that, aren't you? Or do you want the chocolate to be grainy? That's the whole point of the double boiler, so you don't scorch the chocolate....adding water is like asking for trouble, rather than helping.
