How To Make Christmas Fruit Cakes

The festive season just isn't complete without a fruity Christmas cake. Alison from A & M Sugarcraft shows you how to make your own at home with this delicious recipe.

  • 830 g soaked mixed fruit
  • 200 g unsalted butter
  • 200 g dark brown sugar
  • 4 medium eggs
  • zest of 1 lemon
  • zest of 1 orange
  • 40 g chopped almonds
  • 10 g black treacle
  • 3 g mixed spice
  • 200 g plain flour


Line and grease an 8-inch cake tin. Preheat the oven to 130 degrees celsius.

You can mix the ingredients together by hand or using a hand mixer, but the easiest way is to use a food mixer. Place the unsalted butter in the bowl and mix for a few seconds until soft. Add the sugar and blend again until well mixed and fluffy. Break the eggs into a bowl first, then add to the mixer and blend. Then add the black treacle and mixed spice. Finally, add the flour in and mix until fully combined. Remove the bowl from the mixer.

Add the fruit to the mixture in two halves, to make it easier to mix together. Add the finely grated lemon and orange zest and mix through.

Fill the prelined tin with the cake mixture, making sure you spread it out to all corners and sides of the tin. Place in the oven on a low shelf and cook at 130 degrees celsius for four to four and a half hours. Check that it is ready by placing a knife in the centre. If it comes out clean, the cake is ready. Leave it to cool in the tin for a couple of hours before turning it out.
