How To Make Churros
Churros with chocolate or dulce de leche is the perfect way to finish a Mexican feast! Chef Fabricio Cano Davila shows you how to make them in this step by step guide.

Ingredients
- 220 ml water
- 3 eggs
- salt
- sugar
- 85 g unsalted butter
- 100 g plain flour
- 500 ml sunflower oil
- 200 g caster sugar
- 20 g ground cinnamon
Method
Pour the water into a pan, then add a pinch of salt, a pinch of sugar, and the butter. Heat until the butter has melted.
Add the plain flour and mix well off the heat. When the dough no longer sticks to the pan, return to the heat and cook the flour for about 5 minutes stirring the whole time.
Transfer the dough to a bowl and allow it to cool. Add the eggs and mix until smooth.
Spoon the paste into a piping bag, and drop a little in hot oil. The churro should float when the oil is hot enough.
Pipe 3-4 churros into the oil, cutting them off with scissors, and cook for 2-3 minutes until golden.
Pour the caster sugar and cinnamon into a tray and mix well.
Remove the churros from the oil and place them on a plate covered in kitchen paper to drain off some of the oil.
Dust the churros in the sugar and cinnamon, then serve.
