How To Make Cobb Salad

Step 1: You will need...
- 400 g flank steak
- 2 chicken breasts, thinly cut into 4
- 2 avocadoes
- 2 tomatoes
- 100 g rocket (arugula)
- 6 rashers of bacon, grilled
- for the marinade:
- 2 cloves garlic, chopped
- ½ tbsp paprika
- ½ tbsp oregano
- ½ tsp cayenne
- ½ tsp salt
- 3 tbsp brown sauce (steak sauce)
- 3 tbsp red wine vinegar
- 60 ml olive oil
- for the dressing:
- the juice of 1 lime
- 1 tsp Dijon mustard
- 50 g blue cheese
- 100 ml olive oil
- salt and pepper
- 1 grill pan
- tongs
- 2 large bowls
- 1 small bowl
- 1 spoon
- 1 chopping board
- 1 knife
- 1 tray
Step 2: Make the marinade
Into the large bowl, add the paprika, garlic, oregano, cayenne pepper, brown sauce, salt, red wine vinegar and olive oil. Mix together well.
Step 3: Marinate the meat
Add the steak and chicken to the marinade. Using your hands, coat the meat and leave for 10 minutes.
Step 4: Cook the meat
Heat the grill pan for 5 minutes. Add the chicken and grill for 4 minutes, turn and grill for a further 4 minutes. Remove the chicken onto a tray. Grill the steak for 14 minutes, turning after 7 minutes on each side. Leave to cool with the chicken.
Step 5: Cut the tomatoes
Cut the tomatoes in half and then into wedges, discarding the top. Add the wedges ¡to the large bowl.
Step 6: Prepare the avocadoes
Cut each avocado in half and twist in opposite directions to pull the halves away from the stone. Remove the stone and peel and cut into quarters. Finally, cut into wedges and add to the large bowl.
Step 7: Finish the salad
Cut the bacon into squares and add them to the large bowl. Add the rocket and season with salt and pepper.
Step 8: Make the dressing
Into the small bowl, add the mustard and lime juice. Crumble in the blue cheese and season with salt and pepper. Pour in the olive oil and mix together well.
Step 9: Cut the meat
Slice the steak and chicken into pieces 5mm thick.
Step 10: Dress the salad
Drizzle the dressing over the salad and mix together well.
Step 11: Serve the salad
Lay out the slices of steak and chicken on a plate. Spoon over the salad, drizzle on more dressing and serve.

Don't you have to worry about cross contamination when marinating chicken and beef together?

OK, yeah, brown sauce = steak sauce, according to Wikipedia: http://en.wikipedia.org/wiki/Brown_sauce
What would be an equivalent to "brown sauce" if I am buying ingredients for this recipe in the U.S.? Is it like steak sauce (a thick, Worcestershire sauce-based sauce with the consistency of ketchup, a common brand being A-1 steak sauce)?
Looks different than what I've had in restaurants.Probably better.
