Step 1: Prepare the leeks

  • 700 g cod fillets, boneless and skinned
  • 1 kg potatoes, peeled, washed and dried
  • 450 g leeks
  • 1 garlic clove, crushed
  • 500 ml double cream
  • 50 g butter, diced
  • 90 g emmental cheese, grated
  • 30 g parmesan cheese, grated
  • ½ a nutmeg, grated
  • salt and pepper
  • 1 chopping board
  • 1 sharp knife
  • 1 medium sized pan
  • 1 bowl
  • 1 gratin dish
  • 1 tea towel

Step 2: Sauté the leeks

Melt the butter in a pan, sauté the leeks with the garlic gently for about 3-4 minutes or until soft and take off the heat.

Step 3: Preheat the oven

Set the oven to 180ºc/gas mark 4.

Step 4: Prepare the potatoes

Thinly slice the potatoes and place them in a bowl with the cream. Season with salt and pepper and add some grated nutmeg. Mix together and leave to one side.

Step 5: Prepare the cod

If necessary, remove and discard the skin. Cut into generous sized chunks.

Step 6: Butter the dish

Using kitchen paper, butter the gratin dish – this will stop the cod and leek bake sticking.

Step 7: Prepare the bake

Spoon half of the potato cream mixture into the base of the gratin dish. Distribute the chunks of cod evenly on top and add the garlic and leek mixture.

Cover with the rest of the potatoes and pour over the remaining cream.

Step 8: Sprinkle with both cheeses

Cover all the ingredients with the grated parmesan and emmental cheeses.

Step 9: Bake in the oven

Place the gratin in the oven and bake for 45 minutes.

Step 10: Serve the dish

When the gratin is golden brown take out of the oven and serve immediately.

    just making it - did it in a really good oven for the time described but the potatoes which i sliced under 2mm thick, are pretty solid - got it back in the oven now for another 20 mins at least!

    Getting my fresh supply of fish delivered tomorrow will definitly try this but i think i will also miss off the nutmeg as i dont like it
