Make the coffee

Put the coffee and sugar into a bowl, add the boiling water and stir well until completely dissolved. Using a sieve, strain the coffee mixture into a shallow container and leave it to cool down.

Cover and freeze

When the coffee has cooled cover the container with cling film and put it in the freezer for 2 hours.

Take it out and break up the mixture

After 2 hours, remove the container from the freezer, peel back the cling film and break up the semi-frozen coffee with a fork. When sufficiently mashed, re-cover and place the container back in the freezer for a further 30 minutes.

Break the mixture up again

Once again use a fork to break up the granita then return it to the freezer for a further 30 minutes.

Finish the granita and serve

Remove the container completely from the freezer and discard the cling film. Break up the granita until flaky in consistency. Spoon it into glasses and serve with a spiral of whipped cream.
