How To Make Cold Orzo, Herb And Olive Salad

Step 1: You will need…
- 250 g orzo
- 70 ml olive oil
- 200 g feta cheese
- 120 g pitted black olives
- 3 tomatoes
- 1 bunch of coriander
- 1 bunch of parsley
- the juice of 1 lemon
- 1/2 tsp chilli flakes
- salt
- 1 bunch of basil
- 1 saucepan with a lid
- 1 wooden spoon
- 1 large bowl
Step 2: Cook the orzo
In the saucepan, heat 3 tablespoons of olive oil on a high heat. Add the orzo and mix together well with the oil. Pour in enough water so that it rises about 2cm above the orzo and boil. Once boiling, cover with the lid and reduce the heat.
Step 3: Check the orzo
After 10 mins check the orzo, if need be, add more water. Leave until the pasta is completely cooked through, remove from heat and allow to cool.
Step 4: Assemble the salad
Once the orzo has cooled, stir to break up any lumps that may have formed. Into the large bowl add the feta cheese, olives, tomatoes, basil, coriander, parsley, chilli flakes and lemon juice. Drizzle with olive oil to finish.
Step 5: Serve
Leave the salad for a couple of hours before serving which allows it to absorb all of the varying flavours. Eat on its own or as an accompaniment to a larger meal.
