Step 1:

Prepare the calamari

Cut each calamari into 2cm rings, or pieces, then place onto a tray.

Froth the eggs

Add the water to the egg white and whisk together vigorously with a fork.

Using a brush, coat each of the calamari rings with the egg and water mixture. Turn them all over in the tray and coat the other side.

Coat the calamari

Put half of the coriander powder onto another tray and press in the calamari to give a generous coating.

Make the sauce

In a bowl mix the lime juice, ginger and olive oil.

Prepare the melon and basil

Put the melon into a larger bowl and add the basil. Pour over the sauce. Season with a pinch of salt and black pepper and mix together well.

Fry the calamari and shallots

Heat the frying pan over a high temperature. Add a little oil and butter and let them melt together.

In two batches, add the calamari to the hot pan. Add more butter if needed. Cook for one minute, then flip over to cook the other side.

Sprinkle in some of the chopped shallots and toss them together with the calamari and cook for about 30 seconds more.
Remove from the pan, wipe it clean and repeat the process with the second batch. Finally season with salt.

Assemble and serve

Place the calamari onto a plate and spoon over some of the melon mixture. Repeat to build and layer the salad. Drizzle over some sauce and add some shallots. The dish is now ready to serve.
