Ingredients

  • 180 g plain flour
  • 85 g butter, melted
  • 1 baking powder
  • 1 tsp bicarbonate of soda
  • 120 g sugar
  • 2 large eggs
  • 250 ml milk
  • 180 g cornmeal, or crushed cornflakes
  • 1 tsp vanilla extract

Method

Pre-heat your oven to 200 degrees Celsius.

Place the cornmeal or crushed cornflakes in a bowl, then sift in the flour, the baking powder and the bicarbonate of soda. Mix in the sugar, then make a well in the centre and set the bowl aside.

Beat the eggs in a bowl, then whisk in the melted butter, the milk, the vanilla extract and the salt.

Pour the wet ingredients into the well you made in the dry ingredients, then gently mix everything together. Spoon the mixture into a 6 muffin tin which has been greased and floured.

Bake for about 20-25 minutes. Check whether they are cooked through by piecing one of the muffins with a skewer; if they are ready, the skewer will come out clean.
