Step 1: Prepare courgettes

  • 500 g courgette, grated
  • ½ tsp salt
  • 8 spring onions, chopped
  • 120 g feta cheese, crumbled
  • 1 tbsp chopped parsley
  • 1 tbsp chopped mint
  • 2 eggs, lightly beaten
  • 60 g flour
  • sea salt, to taste
  • freshly ground black pepper
  • 60 ml oil for frying
  • for the yoghurt sauce:
  • 1 clove of garlic, chopped
  • 1 tbsp olive oil
  • 120 g plain yoghurt
  • 2 tbsp lemon juice
  • sea salt
  • freshly ground black pepper
  • 1 colander
  • paper towels
  • 1 mixing spoon
  • 1 mixing bowl
  • 1 frying pan
  • 1 tablespoon
  • 1 serving plate
  • 1 spatula
  • 1 bowl for the sauce

Step 2: Squeeze the courgettes

After 30 minutes, squeeze the excess liquid from the courgettes and pat dry.

Step 3: Mix ingredients

Put the courgette, spring onion, feta cheese, parsley, mint and eggs into a bowl and stir lightly to combine. Then stir in the flour, salt and pepper.

Step 4: Heat the frying pan

Heat the oil in the frying pan over a medium to high heat.

Step 5: Cook the fritters

Drop one tablespoon of batter for each fritter into the hot oil, flattening gently with the back of a spoon. Cook for 2 minutes on each side until golden brown. Drain and keep warm.

Step 6: Make the sauce

Place the garlic, olive oil, yoghurt, lemon juice, salt and pepper into a bowl and mix well.

Step 7: Finish and serve

Place the sauce on a serving plate with 4-5 fritters on the side. Garnish with a wedge of lemon or lime and serve.

    I would recommend using a fork or other utensil to help in turning the fritters over when frying, and NOT your fingers which could get a scalding from the hot oil!

    Courgette is also called Zucchini, which will be a big "OH!" for those on this side of the pond :)
