Hi. I'm Eloise from the Gourmet Cupcake Company in Chelmsford, in Essex. I'm going to show you some handy how-to's on icing and decorating cupcakes.

So, I'm going to show you how to make cream cheese frosting. So I'm going to use a mixer like this one, which is a free standing mixer. If you don't have one of these, you can use a hand blender with the beater attachments and just mix everything in a separate bowl.

But I'm going to use one of these today, because it's easier to mix with the icing sugar, because you have this sort of convenient guard over the top that keeps all the ingredients in. So the first thing I'm going to put in is the butter. I've got 75 grams of butter in here, so I'm just going to pop that in the mixer.

Next, I'm going to add 300 grams of icing sugar. And then I'm going to add 125 grams of cream cheese. So all this is just going to be mixed around together.

The only other thing we need is a teaspoon of vanilla extract. So I'm going to put this on a low speed at first. We need to make sure all the ingredients incorporate well together, so to stop the icing sugar going everywhere, if you start on a low speed, it's much easier to mix everything together.

And when you see it start to be incorporated, you can just turn the mixer up to a higher speed and beat it for at least three minutes. So now you can see that it's starting to come together. This is the point where you can turn it up to the higher speed and beat it for three minutes.
