How To Make Cream Of Mushroom Soup

Cream of Mushroom Soup Recipe. Creamy mushroom soup accompanied with crusty bread, deliciously warming for a chilly winter's day. Enjoy our Cream of Mushroom Soup recipe.

You Will Need

  • 60 g butter
  • 1 small onion, diced
  • 4 stalks of celery, diced
  • 1 leak, chopped
  • 200 g mushrooms, chopped
  • 3 Tbsp flour
  • 340 ml milk
  • 460 ml chicken stock
  • salt and pepper to taste
  • 1 saucepan
  • 1 wooden spoon
  • 1 liquidizer
  • 1 ladle

Step 1:

Melt the butter

Place the pan over a low heat, add the butter and leave it to melt.

Step 2:

Add the vegetables

Add the diced onion, celery, leeks and mushrooms. Sweat them in the butter for about 5 mins without allowing them to colour.

Step 3:

Add the flour

When the vegetables are soft and onions translucent, add the flour and mix it in well.

Step 4:

Add the milk and chicken stock

Pour in the milk and then the chicken stock and stir.

Step 5:

Season with salt and pepper

Before leaving the soup to cook, season it well with salt and pepper.

Step 6:

Cook for 25 minutes

Leave the soup to cook for about 25 minutes, stirring occasionally.

Step 7:

Liquidize the soup

After the 25 minutes and when you see the soup has turned creamy, pour it into a liquidizer and blend until no bits remain.

Step 8:

Taste and season again

Taste the soup and if necessary season again then ladle it into a large bowl and serve with crusty bread.

i reli love making this soup..my grandad and uncle come to my house every week and they live far away..they love it so much they come for it..and my family loves it..im onli 16 and i LOVEEE cooking..every1 says im reli good..the vegetable soup i make is awesom aswell..both gorgeous soups my fav is the mushroom tho

I made this soup for dinner last night; it was delicious. I couldn't get hold of a leek so just used a couple more mushrooms. The soup looks excellent, the aroma is devine and the taste is to die for. This is going to be a regular feature in our house from now on ... :)

I reduced the flour to 2 1/3 tablespoon but it was still a little 'too starchy'. I'd suggest using just 1 3/4 tbs. Otherwise, good recipe!

Just returned from Co-op with some mushrooms for soup. Logged on and watched video. Went into kitchen, made soup and had to have a bowl as it looked sooooooooooooo yummy. Best mushroom soup I have ever tasted - thank you. Nndxxxx

im a pro chef and this is the correct way to make mushroom soup adding a bit of truffle oil at the end for an attractive presentation

i cooked this soup but without the leeks and it was very tasty i served mine with some sauteed mushrooms, garlic croutons and chives sprinkled on top

Excellant soup make it all the time. Steam veg instead of sweating them in butter makes it less calories

How easy and delicious is this? - I was starving but had hardly anything in the fridge so I made it without the leek or celery (substituted potato and spring onions). Definitely one for my list of favourites.
