How To Make Creamy Butternut Squash Soup

Ingredients
- 1 butternut squash, peeled and chopped
- 1 onion, sliced
- 1 celery stick, chopped
- 2 garlic cloves, peeled
- 1 cups (250ml) orange lentils
- 1 cinnamon stick
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp ginger
- 1 ltr vegetable or chicken stock
- salt
- pepper
- 100 ml cream or soya cream
Method
Put the chopped squash, chopped onion, garlic, chopped celery, lentils cinnamon stick, cumin, ginger and paprika in a large pan. Pour in the vegetable stock and season with salt and pepper, then stir well. Bring everything up to the boil and simmer for about 30 minutes until the butternut squash and lentils are soft.
Remove the cinnamon stick and add about 100 ml of cream. Blend until smooth. Give it a final taste for seasoning and consistency, adding more water or stock if it is too thick.
