Ingredients
- 250 g mushrooms
- 200 ml double cream
- 180 ml white wine
- 15 g butter
- 1 vegetable oil
- 1 tsp mustard
Method
Heat the butter and oil in a pan and add the mushrooms. Cook on a low heat until they are fully cooked and the liquid they release has evaporated off.
Add the wine and reduce by half.
Add the mustard and mix in.
Add the double cream and cook on a low heat for 1-2 minutes to allow the flavours to incorporate into the cream.
Taste for seasoning.
