How To Make Crepe Suzette

Step 1: You will need
- 4 French crepes, folded in 4 (recipe can be found on our website)
- 200 ml orange juice
- juice of half a lemon
- 2 tbsp sugar
- 5 tbsp water
- 30 g butter, melted
- 3 tbsp Grand Marnier
- 1 frying pan
- 1 wooden spatula
- matches or a light
- 1 skewer
Step 2: Make the caramel
Place the frying pan on a high heat. Add the water and sugar and mix thoroughly. After 2 minutes the they will begin to caramelize.
Add the butter and combine well. Add the orange juice, lemon juice and allow to reduce for about 30 seconds.
Step 3: Heat the crepes
Place the folded crepes into the frying pan and heat for 1 minute. Using the wooden spatula, move them in the sauce to soak them completely.
It's important that the crepes are very hot to help the liquor burn.
Step 4: Flambé the crepes
Pour the Grand Marnier into the frying pan and using a lighter, a long match or a skewer lit at one end, light the liquor.
Flambé for 5 seconds.
Place the crepes onto individual plates and pour some sauce over each one.
Step 5: Serve the crepe suzette
The crepes can be served as they are or with some caramelized orange peel and a dollop of cream or ice cream.
