Step 1: You will need

  • 90 g plain flour
  • 1 egg, lightly beaten
  • 250 ml milk
  • 20 g melted butter
  • 1 pinch of salt
  • Some butter, for greasing the pan
  • 2 tbsp milk
  • 2 tbsp sultanas
  • 250 g ricotta cheese
  • 1 tsp lemon zest
  • 2 tsp icing sugar
  • 1/2 tsp vanilla extract
  • 80 g orange marmalade
  • 60 ml orange juice
  • 1 food processor
  • 2 bowls
  • 1 small pan
  • 1 non-stick frying pan
  • 1 spatula
  • 1 ladle
  • 1 small sieve
  • 1 spoon

Step 2: Make the crepes

Into the blender add the flour, egg, milk, melted butter, and salt. Mix together until smooth. Leave to sit for two hours.

Step 3: Make the filling

Place the saucepan on a low heat and add the milk and sultanas. Heat for three minutes and then remove to cool for five minutes. In the bowl, mix the milk, the sultanas, ricotta cheese, lemon zest, icing sugar, and the vanilla extract.

Step 4: Cook the crepes

Medium heat the frying pan and brush with a little butter. Ladle three tablespoons of batter into the pan and tip the pan slightly to spread it evenly spread. Cook for one minute and then flip and cook for thirty seconds. Place onto a plate.

Step 5: Fill the crepes

Place a heaped tablespoon of the filling in the centre of each crepe. Fold the crepe into half and then half again and place onto a plate.

Step 6: Make the sauce

Place the saucepan on a low heat add the marmalade and orange juice. Stir together and cook until the marmalade has melted. Then remove for the heat and keep for later.

Step 7: Finish the crepes

Place the frying pan over a medium heat and brush with butter. Put the filled crepes into the pan, brush with butter, and cook for thirty seconds. Turn over and cook for another thirty seconds, remove, and place onto a serving plate.

Step 8: Serve

Spoon some of the orange sauce over the crepes and dust with a little icing sugar.
