How To Make Crispy Aubergine Canapés

Step 1: You will need
- 1 aubergine
- 50 g flour
- 2 eggs, beaten
- 100 g bread crumbs
- salt and pepper
- 200 ml oil
- 4 quail eggs, poached
- 1 tbsp mayonnaise
- 1 tbsp chives, finely chopped
- 4 shrimps, cooked and peeled
- 1 tbsp mayonnaise
- 1 1/2 tsp chilli sauce
- a few sprigs of coriander for garnish
- 2 trays
- 2 spoons
- 1 fork
- Kitchen paper
- 1 chopping board
- 1 knife
- 1 peeler
- 1 frying pan
Step 2: Peel and cut the aubergine
First, chop off the top and then peel it lengthways. Next, cut into 1cm slices. Then with each slice, remove the rounded ends, cut in half and in half again.
Step 3: Season the flour
Season the flour with salt and pepper and stir.
Step 4: Bread the aubergine
Take a piece of aubergine and dust it with flour then dip it into the egg and finally coat generously in bread crumbs. Repeat the same process with all the aubergine squares.
Step 5: Fry the aubergine
Heat the frying pan over a medium to high temperature and fill it with 1/3 of the oil. When the oil is slightly hot, add the breaded aubergine and fry for 2 - 3 mins. Turn each piece over and fry for a further 2-3 mins. When brown remove from the pan.
Step 6: VIDEOJUG TIP
Place the aubergine onto a tray covered in kitchen paper to drain off any excess oil
Step 7: Make the chive mayonnaise
Add the chives to the mayonnaise and mix together well.
Step 8: Make the chilli mayonnaise
Add the chilli sauce to the second lot of mayonnaise and stir vigorously until well combined.
Step 9: Complete the aubergine
Take 4 pieces of the aubergine and spoon on a small dollop of the chive mayonnaise. Then place a poached quail's egg on top of each and season with salt and pepper and sprinkle over chives.
Take another 4 pieces of aubergine and place a prawn on top of each one. Then add a small spoonful of chilli mayonnaise and finally garnish with a coriander leaf.
