How To Make Crispy Calamari With Mango Salad

Step : You will need…
- 16 medium calamari, (clean, with heads)
- 1 mango, cut into strips
- 1 bunch of coriander
- 10 tbsp mayonnaise
- 3 tbsp siracha, (spicy chilli sauce, found in Asian markets)
- 100 g flour
- 200 g finely ground corn flour, (semolina)
- 1 ltr vegetable oil
- 1 tbsp fine salt
- 1 chopping board
- 1 knife
- 1 bowl
- 2 trays
- 2 spoons
- kitchen paper
- 1 deep-sided saucepan
- 1 slotted spoon
- 1 strainer
Step 1: Prepare the calamari
Cut all 16 of the calamari into 1.5cm pieces and put them to one side.
Step 2: Mix the flours
Into the bowl mix the ground corn flour (semolina) and the flour.
Step 3: Make the spicy mayonnaise
Add the siracha to the mayonnaise and mix well (if you do not like spicy sauces, minimise the amount of siracha).
Step 4: Heat the oil
Pour the vegetable oil into the deep-sided saucepan and heat over a high temperature.
Step 5: Coat the calamari and strain
Mix the calamari in the flour mixture until all of the pieces are evenly covered. Using a sieve, strain the excess flour.
Step 6: Fry the calamari and season
Check that the oil is hot enough to fry the calamari by testing one piece (it should fry immediately). Fry the calamari until golden-brown (just under 2 minutes) in small batches and transfer to a paper towel. Season with fine salt.
Step 7: Assemble the salad and serve
On a serving plate begin to assemble the salad - spoon a thick line of spicy mayonnaise around the plate and in the middle add the calamari, mango strips and coriander. Finish with some more calamari and serve with a slice of lemon.
