How To Make Crispy Duck Salad With Soy Truffle

Step 1: You will need
- 2 medium duck breasts
- 1 ltr water
- 50 ml soy sauce
- 3 tbsp honey
- 2 star anis
- 1 cinnamon stick
- 11 tbsp soy sauce
- 5 tbsp lime juice
- 6 tbsp honey
- 20 g miso
- 3 tbsp truffle oil
- 5 tbsp olive oil
- 700 ml vegetable oil
- 140 g mixed lettuce
- ½ mango, cut into strips
- 1 bunch of coriander
- salt & pepper
- 2 saucepans
- 1 slotted spoon
- 2 trays
- 1 chopping board
- 1 knife
- 1 bowl
- 1 whisk
Step 2: Cook the duck
Put the duck breasts, water, soy sauce, honey, star anis and cinnamon stick into the saucepan. Bring the ingredients to a boil and then turn down the heat and leave to simmer for an hour and a half.
Step 3: Make the vinaigrette
While the duck is cooking, put the soy sauce, lime juice, honey, miso, truffle oil and olive oil into the second saucepan over a low heat. Whisk all the ingredients together and slowly heat up until the honey melts. Pour into a bowl and put aside.
Step 4: Dry the duck
Remove the duck and place onto the tray to dry out for 10-15 minutes.
Step 5: Fry the duck
Place the saucepan on a medium to high heat and pour in the vegetable oil. When the vegetable oil is hot, carefully add the duck and fry for 1 minute before removing and placing back onto the tray.
Step 6: Finish the duck
Put the crispy duck on the chopping board and carefully cut into thin slices.
Step 7: Finish the salad
Use the bowl to mix together the mixed lettuce, mango, coriander and crispy duck slices. Spoon in 6 tablespoons of vinaigrette and lightly toss.
Step 8: Serve
Serve a delicate portion onto a plate and decorate with a splash of vinaigrette.
