How To Make Crispy Fried Chicken

Paul Mulvenna-Pegrum shows you how to make a delicious and versatile crispy fried chicken, perfect in burgers, wraps or as a snack with a dip.

  • 1 chicken, cut into pieces
  • 1 cups (250ml) milk
  • 2 cups (500ml) all-purpose flour, for coating
  • 1 tsp paprika
  • salt
  • pepper
  • 220 ml vegetable oil, for frying
  • 1 Cajun spices
  • milk


Soak the chicken pieces in milk and mix the spices, flour and seasoning in a plastic bag or piping bag. Place the chicken pieces in the bag and shake thoroughly to ensure the chicken is coated completely.

Remove the chicken from the bag and place in a baking dish or tray. Cover with kitchen paper and place in the fridge for an hour so the flavours can absorb.

Heat the vegetable oil in a pan. Make the oil is around a centimetre deep. Place the chicken pieces in the oil and cook for a couple of minutes on each side. Once cooked, remove from the pan and place on some kitchen paper to absorb any excess oil.
