Step 1: You will need

  • 2 x 300g/10oz pork chops
  • 2 tbsp freshly ground cumin
  • 2 tbsp olive oil
  • 14 pearl onions, peeled
  • 1 ½ tbsp honey
  • 10 g butter
  • 1 jug of water
  • salt and pepper
  • a few sprigs of parsley, for garnish
  • 1 tray
  • tongs
  • 1 brush
  • 1 frying pan
  • 1 spoon
  • 1 small knife
  • 1 barbecue, charcoal or gas
  • 1 bottle of water for dousing flames

Step 2: Prepare the barbecue

If you have a charcoal barbecue light it 30-45 minutes before you plan to cook. It is ready when there are no more flames and the charcoal has turned white. If you are using a gas barbeque, light it up on high and leave it for 15-20 minutes.

Step 3: Cook the onions

Put the onions in the frying pan and cover with water. Add the honey, butter and season with salt and pepper.

Bring to a simmer and cook until the onions are glazed and there is still a little liquid in the pan. This will take about seven to ten minutes.

Step 4: Check the onions

Pierce one of the onions with a small knife to check that they are semi-soft but not mushy.

The onions can be done in advance and reheated with a little drop of water.

Step 5: Season the pork

Brush the chops with oil and season with salt, pepper and cumin. Turn them over and season the other side.

Step 6: Grill the pork

Place the pork on the grill for five to six minutes. Flip the chops over to the other side, cook for another six minutes and remove.

If the flames rise too high, sprinkle over a handful of water to extinguish them and prevent burning.

Step 7: Finishing touches

Place chops on a plate and sprinkle over a little cumin. Next, spoon on some of the glazed onions and garnish with the parsley. You could serve this dish with mash potatoes and meat gravy to make a tasty main meal.

    Eating it now! Opted to use my grill pan instead of a bbq. Turned out delicious.
