Ingredients

  • 300 g soft tofu
  • 3 red radish, grated
  • 1 tsp ginger, grated
  • 3 tbsp katakuriko (potato starch)
  • 1/2 ltr vegetable oil
  • 100 ml water
  • handful of nori
  • 2 tbsp tsuyu sauce

Step 1: Prepare The Tofu, Ginger and Red Radish

Wrap the soft tofu with kitchen roll to drain out excess water. Grate 3 red radishes. Place the grated radish in a sieve and gently squeeze, saving the juice in a bowl. Peel the skin off the ginger then grate until you have 1 tsp grated ginger.

Step 2: Fry The Tofu

Slice the soft tofu into 5 or so slices. Coat the slices in 3 tbsp katakuriko (potato starch). Heat a pan with some vegetable oil. Add the tofu and cook until crispy on each side. Place the tofu onto a serving plate.

Step 3: Add The Dressing

Take 100ml water, add 2 tbsp tsuyu, gently heat and pour on top of the tofu. Garnish with some grated red radish, grated ginger, chives and sprinkle with nori. Serve.
