How To Make Delicious Almond Shortbread Cookies

Almond cookies, with their sandy texture and subtle flavour, are irresistible with tea, coffee or even as a dessert. Learn how to make and decorate them in this step-by-step tutorial.

Ingredients

  • 120 g butter
  • 80 g sugar
  • 120 g plain flour
  • 120 g rice flour
  • 1 egg yolk
  • 1 water
  • almond essence
  • almonds

Method

Add both flours, the sugar and the butter to a mixing bowl. Mix in an electric mixer at medium speed.

Add a little almond esence to your egg yolk, then add this along with your water to the electric mixer. Mix thoroughly at a slow speed.

Bring the dough together by hand. Place it on a sheet of baking paper dusted with caster sugar, sprinkle more caster sugar over the dough and roll until it is about 1.5 cm thick.

Dip your cutter into the caster sugar, then cut out shapes and place them on a baking tray. Prick each cookie with a fork and decorate with an almond and dust with a little caster sugar.

Bake at 150 degrees Centigrade for 15-18 minutes until they start to go golden brown around the edges.
