How To Make Double Baked Potatoes

Step 1: You will need

  • 12 new potatoes
  • 2 strips of bacon
  • 4 oyster mushrooms
  • 20 g butter
  • 3 tbsp grated parmesan
  • 3 tbsp cream
  • 1 tbsp thyme, chopped
  • salt and pepper
  • 500 g rock salt
  • 1 chopping board
  • 1 knife
  • 1 roasting tin
  • 1 frying pan
  • 1 melon ball maker
  • 1 spoon
  • 1 fork
  • 1 bowl
  • 1 tray

Step 2: Preheat the oven

Set the temperature of the oven to 220ºC (425ºF/ gas mark 7).

Step 3: Prepare the potatoes

Pour half of the salt into the roasting tin, spread it over the bottom and then place the potatoes on top.

Step 4: Bake the potatoes

Place the roasting tin in the centre of the oven and bake for about 45 minutes. After this time insert a knife to check that they're soft and if so, remove from the oven.

Step 5: Fry the bacon and mushrooms

Heat the frying pan over a high temperature and when hot, add the strips of bacon. Fry the first side for about 1 min then turn them over. Add a little butter, followed by the mushrooms and cook for another minute.

Turn the mushrooms over, season with salt and pepper, cook for a further minute and then remove everything from the pan.

Step 6: Chop the bacon and mushrooms

When they've cooled down a little cut the bacon strips into small pieces and put them into a bowl. Chop up the mushrooms and add to the bacon.

Step 7: Prepare the potatoes

Take a baked potato and cut it in half. Using the melon ball maker, scoop out the centre of the potato, add it to the bacon and mushrooms and put the skin to one side. Repeat the same process with all the potatoes.

Step 8: Make the filling

Using a fork, mash the potato, bacon and mushroom mixture. Add the parmesan, cream and thyme. Season with salt and pepper and mix together well.

Step 9: Fill the potatoes

Choose the nicest potato skins to use for the final canapés. Spoon a dollop of the potato mixture into each one. When you finish, reshape them slightly and then return them to the roasting tin with the salt.

Step 10: Bake

Put the potatoes back in the oven, bake them for another 10 minutes and remove from the oven.

Step 11: Serve

Scatter the remaining salt onto a serving dish, arrange the baked potatoes on top and serve immediately. When you've tried these why not make the same recipe but substitute the bacon and mushrooms for chopped prawns and spring onions.
