Ingredients

  • 180 g tinned white crab meat
  • 3 spring onions, finely chopped
  • 1/2 tsp dried chilli flakes
  • 1 lemongrass stick, finely chopped
  • breadcrumbs
  • 1 mayonnaise
  • 1 lime
  • 1 inch piece of ginger, peeled and grated
  • 1 tsp fish sauce
  • flour
  • sesame seeds
  • 1 egg, beaten
  • 750 ml vegetable oil

Method

Mix together the crab meat, the chopped spring onion, the dried chilli, the lemongrass, the breadcrumbs, the mayonnaise, the grated ginger, the zest and juice of the lime, and the fish sauce. It should be sticky enough to form into balls; if it is a bit wet, you can add a few more bread crumbs.

Make the mixture into 4 patties using your hands, then dip them in flour, followed by egg, and breadcrumbs mixed with sesame seeds.

Heat the oil in a pan up to about 170 degrees Celsius, and gently place your crab cakes in. They should only take a few minutes to go golden brown and crispy.

Serve with sweet chilli sauce.
