How To Make Easy Muffins

There is nothing quite like eating homemade muffins straight from the oven, and they are much easier to make than you might have thought! In this step by step guide Selina Wragg, baker and owner of Wraggamuffins, shows you how to make some white chocolate muffins.

Ingredients

  • 280 g plain flour
  • 85 g butter, melted
  • 1 baking powder
  • 1 tsp bicarbonate of soda
  • 120 g sugar
  • 200 g white chocolate
  • 2 large eggs
  • 250 g milk
  • 1 tsp vanilla extract
  • 1 pinch of salt

Method

Pre-heat your oven to 200 degrees Celsius.

Sift the flour, bicarbonate of soda and baking powder into a bowl, then mix in the sugar, the salt and the white chocolate chunks. Make a well in the middle of the dry ingredients and set aside.

Lightly beat the eggs in a separate bowl, then add the melted butter, the vanilla extract and the milk whilst whisking.

Pour the wet ingredients into the well in the dry ingredients, then gently mix together until combined.

Grease and flour a 6 muffin tin, then spoon the mixture into it.

Bake for 20-25 minutes. Test whether your muffins are cooked all the way through by inserting a skewer into one of them; if it comes out clean, the muffins are ready.
