Total Time:
50 minutes

Step 1: You will need.

  • 150 g dark cooking chocolate
  • 3 tbsp cream
  • 20 g unsalted butter
  • 200 ml cream
  • 1 tbsp orange zest
  • 2 tbsp sugar-free dark cocoa powder
  • ½ ltr water (approx)
  • 2 orange slices
  • 1 tbsp sugar
  • 1 tsp unsalted butter
  • 1 small cooking pan
  • 1 large bowl
  • 1 medium bowl
  • 1 electric beater
  • 1 whisk
  • 1 large knife
  • 1 fork
  • 1 spatula
  • 4 bowls for serving
  • 1 small ladle
  • 1 small frying pan
  • 1 chopping board

Step 2: Heat water.

Begin by placing a small cooking pan on a medium heat and fill it with water. Allow it to simmer.

Step 3: Prepare chocolate.

Using the knife and the chopping board, cut the chocolate into cubes. Place into a bowl and add the cream and butter.

Step 4: Melt chocolate.

Transfer the ingredients in the bowl into the simmering water. Allow to simmer for 3 minutes before stirring gently to melt the chocolate and butter. When creamy, remove from the heat.

Step 5: Prepare mousse.

Add 200ml of cream to a bowl and whisk until stiff. Add the lemon zest and cocoa powder and combine. Add the melted chocolate from the other bowl and combine. Once the same colour, ladle into 4 separate serving bowls. Store in the fridge for 8 hours.

Step 6: Make caramelised oranges.

Before serving, place a small frying pan on a medium heat and melt a knob of unsalted butter. While it melts, cut and add orange slices to the saucepan. Sprinkle with a tablespoon of sugar and allow to caramelise on both sides.

Step 7: Serve.

Add 2 slices of orange to each serving bowl and pour over a little juice from the frying pan. Serve when the oranges are hot and enjoy with shortbread biscuits.
