Using freshly cooked rice is definitely okay. But one thing to note, if the consistency of the rice tends to be wetter than refrigerated rice, then it would mean that you need to use more oil before you introduce the rice to the wok. However, since this video uses a non-stick wok, it shouldn't be a problem. At a typical chinese home, as long as you use a substantial amount of oil (proportional to the wetness of the rice) and a very strong heat to fry the rice, any kind of rice can be used.

u can use freshly cooked unrefrigerated rice but it probably wouldn't be as nice because it is softer.. refrigerating it will lessen the moisture making it easier to fry.. but yea sure! just perhaps lessen SLIGHTLY the amount of water when u cook the rice..

for jasmine rice, you can use fresh rice right away Use 1 cup of dry rice, and 1 and 2/3 cup water. it'll be dry enough to make fried rice right away w/o being too sticky

Yes you can use unrefrigerated rice. Just make sure they are fluffed and cooled right down, not just cooked rice.
