If not kept, but merely coooled, it makes for a claggy mass when you cook it. Also the egg must always go in at the end. Miss out garlic if you don;t like it. Sneak some in if your partner thinks they don't - they maychange their mind! Frozen peas are the next best thing to pod-fresh peas, so-called fresh peas from a shop are not fresh, but are old and the sugar will have turned to starch, making them floury. Strictly speaking egg fried rice does not have all the sauces and veg in it, but who cares?&lt;/p&gt;</description>

      <description>&lt;p&gt;If you guys are into "fried rice" you should try this : it's kinda came from my eating habit but it tastes great, everyone said so lol. 1 egg/ oil for stir frying/ a bowl of cooked and refridgerated rice/ a heaping tablespoon of Mayonaise/ green onion,chopped/ pinch of S&amp;P 
1- mix rice and mayo up real nice
2- heat the oil and add in beaten egg, work it into a "soft" scramble (not over cooked)
3- add in the rice mixture, turn up to highest heat possible, stir and saute the pan so every grains of rice touches the hot wok
4- season with S&amp;P then add green onion, saute a couple of times and take off the heat.

personally i love mayonaise, and i think it goes really well with fried rice, so i tried mixing it first. then later i found that some japanese restaurant does this as well, by asking the chef it appears that the reason they do this is because "mayonaise" contains all importain ingredients for fried rice "oil, egg, salt, sugar, pepper" so it gives the fried rice a "rich" flavor and touch to it. hope you guys like it&lt;/p&gt;</description>
